Fish Tacos

 Fish tacos is something I have been wanting to try to make ever since I went on a vacation in Florida in 2011.  While searching Pinterest, I discovered a recipe for fish tacos but didn't have all the ingredients.  I had to modify  the recipe and as it turned out, they were pretty good even if I do say so myself.  

Fish Tacos

2 lbs of tilapia
6 T of lime juice
3 T of soy sauce
3 T of oil

Marinate the fish in the sauce at least for 15 minutes.  I marinated the fish for over 90 minutes.  Spray pan with cooking spray and cook until flaky.


While fish is marinating, prepare the following sauce and salsa. 
Sauce

3 T of Miracle Whip
2 whole containers of Plain Greek Yogurt
3 T of lime juice 
2 chipotle pepper in adobe sauce


Salsa

1 chopped red pepper remove membrane and seeds to chop
1 chopped green pepper remove membrane and seeds to chop
2 oz of green chillis from can
1 sweet onion
handful of cilantro
chipotle pepper in adobe sauce
1 can rotel

After chopping ingredients place mixture in food processor and pulse until the consistency of salsa. 

Avocado


When ready to assemble mash avocado on flour tortilla.  Add sauce and salsa.  Top with flaky fish and serve.

Other items to have on hand.  Black Olives, Shredded Cheese, Spanish or Mexican Rice, and for a full Taco bar, have ground beef tacos and the makings for that.
