Fried Peach Pies

Last week I made fried peach pies for the first time.  I found the recipe for the crust somewhere on the Internet but can't find it again. The fried pies were so yummy I couldn't eat just one.  My children seemed to devour one after another and even got a high praise from my dad so I know they tasted pretty delicious.

Here is the recipe I followed.

3 cups of all purpose flour and 2 sticks of butter and 1 tsp of salt.  I mixed these together on the low speed of my Kitchen Aide Mixer. Mix this until the butter and the flour start sticking together in a crumbly mixture. (I had to stop the mixing several times to remove the butter and flour that was clogging the beater.)   While the flour/butter mixture was mixing, I combined  1/2 cup of ice cold water, 1 tsp of vinegar, and 1 egg.  After I mixed the water, egg, and vinegar together, I added it to the flour mixture by making a well in the center of the flour mixture.  I mixed the new combination together until it formed a ball.  I removed it from the bowl and placed on parchment paper covered with flour and a little bit of sugar.  I kneaded the ball of dough for about 5 minutes.  After that I would take balls of dough a little larger than a ping pong ball and roll it out on the floured/sugared surface.  I would roll untill I had a circle and then fill each with a tablespoon or so of my peach mixture.  I fried them in Crisco... hence Taylor's comment about my first attempt at fried pies... "Mom, you're frying them in Crisco.  You know they will be good."

The blogger that I got this recipe from mentioned this is the recipe she uses for all pies.  You can also keep leftover crust in an airtight bag in the fridge for pies in the near future.

As for the peach mixture, there are several good ones on the Internet. I did add a little vanilla and cinnamon to my mixture of peaches and sugar just for a little different flavor.

This is the mixture I made
3 tbsp of cornstarch
3/4 cup of water
1 cup of sugar
1 tsp of vanilla
1/4 tsp of cinnamon
Several ( I don't know how many) fresh peaches
pinch of salt

Combine cornstarch and water in a cup and stir until dissolved.  Place sugar and salt in medium saucepan, add water cornstarch nmixture.  Stir over low heat until thick and clear.  Add flavoring and peaches. 

Spoon onto circles of dough and fry in skillet.
